Mapping Europe's Plant-Based Fermentation Heritage

Europe has a rich and diverse tradition of plant-based fermented foods, yet much of this knowledge has remained scattered across regions, cultures and local communities.

HealthFerm has addressed this gap by creating one of the first comprehensive Atlas of Plant-Based Fermented Foods in Europe, documenting traditional fermented products, their raw materials, production methods and geographical distribution. This resource provides a valuable foundation for preserving Europe's fermentation heritage while identifying opportunities for future food innovation.

The atlas was developed through close collaboration between HealthFerm partners across Europe, who collected detailed information on traditional fermented foods from their respective countries. Rather than focusing only on well-known products, the project aimed to capture the full diversity of plant-based fermented foods, ranging from cereal- and pulse-based staples to fermented vegetables, beverages and other regional specialties. This broad approach highlights the remarkable diversity of fermentation practices that have evolved across Europe over centuries.

Beyond documenting traditional knowledge, the atlas serves as a scientific resource for identifying promising raw materials, fermentation techniques and microbial ecosystems that can inspire the development of healthier and more sustainable foods. By linking food traditions with modern food science, HealthFerm demonstrates how cultural heritage can support innovation in plant-based diets and contribute to resilient food systems.

The atlas also promotes greater awareness of Europe's intangible food heritage. Many traditional fermented foods are produced only locally and risk being lost as food systems become increasingly standardised. By systematically documenting these products and making the information accessible to researchers, industry and the wider public, HealthFerm contributes to safeguarding valuable knowledge while creating new opportunities for research, education and product development.

Together, the European Atlas of Plant-Based Fermented Foods provides a unique overview of Europe's fermentation landscape and establishes an important knowledge base for future scientific research, food innovation and the preservation of regional food cultures.
