HealthFerm Stakeholder Board Workshop: Exploring Consumer Attitudes Towards Plant-Based Fermented Foods - Insights from HealthFerm's Consumer Survey
On April 30th, 2024, a Stakeholder Board workshop was organized with the intention to disseminate the findings of a first consumer survey with focus on plant-based fermented foods.
After the introduction and welcome by Marnie Hewat (Bridge2Food), Armando Perez Cueto (Umea University) presented a short overview of the HealthFerm project with a focus on Work Package 4 and consumer behaviour, together with the findings of the consumer survey at EU level.
The main constructs discussed were attitudes and trust towards plant-based fermented foods, consumer expectations towards plant-based fermented foods, and willingness to try them. The Stakeholder Board was invited to an open discussion on the implications these results may have on the field.
The fruitful discussions with the HealthFerm Stakeholder Board in this workshop brought valuable insights, which can further be implemented and fine-tuned throughout the project.
